No Bake Lunchbox Protein Bites
Ingredients
1 cup rolled oats or oat flour
3/4 cup desiccated coconut
2 teaspoons vanilla bean extract
1 cup PeaNOT Butter
1 tablespoon maple syrup
1 tablespoon coconut oil, melted
Optional: 1/2 cup choc chips
Method
Combine all ingredients (except the choc chips) into a food processer and process until a sticky mixture is formed. Add more PeaNOT Butter if it is too crumbly.
Stir through the choc chips.
Roll mixture into tablespoon sized balls.
Store in the fridge or pop a few into lunchboxes for protein and energy filled snacks.
