Nut-free Bliss Balls

Nut free high protein snacks

Ingredients

1/2 cup PeaNOT butter, crunchy
1 cup oats
1/2 cup ground flaxseed
1/4 cup chia seeds
1/4 cup mixed seeds (pumpkin, sunflower)
1/2 cup cranberries/sultanas
2 tbsp cacao powder
2 tbsp coconut oil, melted
1 tbsp maple syrup or honey
1/2 cup water

To Roll

Shredded coconut
Cacao powder

Method

  1. Place all ingredients, apart from water, in food processor and blitz until combined. Slowly add water with motor running until mixture holds together (you may need more or less of the water so work slowly).

  2. Once mixture holds together, roll heaped tablespoons into balls, then roll in shredded coconut or cacao powder if desired.

  3. Store in airtight container in fridge for 7 days.
