Nut free high protein muesli bars

Ingredients

1 cup PeaNOT Butter
1 tbsp coconut oil, melted
½ cup maple syrup, or to taste
1½ cups mixed raisins / cranberries / sunflower seeds / pumpkin seeds
½ cup coconut chips
2 cups rolled oats
150g (5.3oz) chocolate, melted (optional)

Method

  1. Add PeaNOT butter, coconut oil and maple syrup to a saucepan and warm over medium heat. Stir continuously until well combined. (Alternatively use a microwave proof bowl and microwave in 20 second intervals, stirring each time, until smooth.)

  2. Add all dry ingredients to a large bowl and toss to combine. Pour over wet ingredients and stir to combine. Add extra maple syrup to your preferred sweetness. If the mixture is too wet then add extra oats.

  3. Line a baking tin with baking paper. Spoon the muesli bar mixture in and press down with wet hands or a wooden spoon to flatten the bars.

  4. Pop in the fridge to harden for two hours, or overnight.

  5. Slice bars into squares or rectangles and store in an airtight container in the fridge.

  6. Drizzle chocolate over muesli bars.
