Best Salad Dressings

Simple salad dressings nut-free satay and more

Ingredients

Nut-free Satay Dressing:

½ cup Pea-NOT Butter Smooth, warmed
3 tbsp tamari or soy sauce
2 tbsp sesame oil
2 limes, juiced
1 tsp runny honey or maple syrup (if vegan)
1 tsp ginger, finely grated
1 small garlic clove, crushed

Herby Avocado Dressing:
1 cup basil, parsley and mint
1 avocado scooped
2 tbsp avocado oil
½ cup unsweetened Greek yoghurt
1 garlic clove, crushed
2 limes, juiced
Salt, to taste

Dijon Vinaigrette Dressing:
¼ cup apple cider vinegar
¼ cup avocado oil
2 tbsp Dijon mustard
2 tbsp runny honey, or to taste
Salt, to taste

Tahini Dressing:
⅓ cup hulled tahini
2 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, crushed
2 tbsp maple syrup
Salt, to taste
Water, as needed

Method

  1. Satay dressing: add all ingredients to a blender and blitz until smooth. Add honey/maple syrup to your desired sweetness.

  2. Herby avocado dressing: add all ingredients to a blender and blitz until smooth. Season to taste with salt.

  3. Dijon vinaigrette dressing: whisk all ingredients together in a small jug or bowl until well combined. Add honey to your desired sweetness. Season to taste with salt.

  4. Tahini dressing: whisk all ingredients together in a small jug or bowl until well combined. Add water to your desired consistency. Season to taste with salt.
